#GreenMondaySA: Black bean burritos

Burritos are incredibly versatile and can be stuffed to anyone's tastes. While meat forms part of the traditional burrito filling, it's Green Monday, so kick the beef and keep the beans in this quick and easy burrito recipe courtesy of Compassion Over Killing.

Ingredients:

• One can (450g) black beans, drained and rinsed
• 1/2 cup (125ml) salsa
• one cup (225g) cooked brown rice
• 12 flour tortillas
• One cup (225g) shredded leaf lettuce or spinach
• one tomato, diced

Instructions:

1. Combine the black beans, salsa, and rice in a saucepan and simmer gently for three minutes, stirring occasionally.
2. Remove from heat, cover, and let sit for five minutes.
3. In an ungreased skillet, heat a tortilla until warm and soft, then spread a line of the bean mixture down the centre.
4. Top with lettuce, tomato, and more salsa, if desired.
5. Roll the tortilla around the filling, then repeat with the remaining tortillas.
