Gautier's enthusiasm and creativity is based on sourcing and cooking with local organic ingredients with a infectious passion honed during his past three years as head chef of Kurland Hotel in Plettenberg Bay. Gautier favours culinary flavours from France, Italy, Morocco, Spain and Thailand and uses experience gained at Le Gaveroche and The Wolsley Grand Café in London.
