Estate launches maiden Methode Cap Classique
This Blanc de Blanc (literally translated meaning ‘white from white') is considered a flawless expression of a classic French Champagne varietal and one of only a few Cap Classiques made solely of Chardonnay grapes.
“As the name, meaning 'my desire', implies, our first MCC aims to satisfy what the senses long for. In my personal opinion a Blanc de Blanc-style bubbly needs to have fresh, zesty citrus flavours with a touch of biscuity yeastiness and I believe we have achieved this with our new sparkler,” says Eikendal winemaker Henry Kotzé.
Following the time-honoured method of second fermentation in the bottle to create the fine mousse of a true Cap Classique, the Eikendal Mon Desir 2005 spent two years on the lees allowing its character to develop to the full. After disgorgement to remove the sediment, a dash of Noble Late Harvest from the same vintage was added as the ‘liqueur d'expidition' in true French style to top up the wine.
The Mon Desir 2005 can be enjoyed immediately but will also keep well for at least five years after bottling. It is available directly from the Eikendal Cellar at R65 per bottle.
