Staffords launches White Choc Discs
White Choc Discs are now available as part of the Staffords baking range from Stafford Bros & Draeger. They can be used for baking and decorating cakes, biscuits or cup cakes.

Soufflés and mousses
Some uses include mixtures for soufflés and mousses. All that's needed is to melt the chocolate and combine it with the egg yolks and flavouring. After that, it's simply a matter of adding the cream and egg whites.
Piping is easy too. The melted chocolate merely needs pouring into a heavy-gauge polythene bag. The bag is then sealed, a corner cut off to make a piping hole, and the Staffords White Choc is squeezed out.
