I was managing an 80 seater restaurant (Isola) and 300 seater pool at the One & Only Cape Town. With this hotel being a 6 star property, I have gained the understanding of only the best with regards to meeting and exceeding guest expectations. Whilst at the One & Only I have been responsible for maintaining the beverage cost of sales as well as maintaining the maximum profitability for the department. With this role, I was able to grow as a manager and gain valuable experience. Many of my duties included guest interaction, hiring and disciplining of staff, rostering of staff, on-going training, analyzing the financials of my department, maintaining par levels, managing functions and liaising with clients as well as many other administrative duties.
When the pool has closed for the Winter period, I was asked to manage Reuben's Restaurant. This is an award winning restaurant and ranks among the top 10 restaurants in Cape Town. Reuben's services the entire hotel as well as In-room Dining, Vista Bar and the restaurant itself. We deal with high volumes of guests who always expect nothing short of the best.
During my time at Reuben's I have been responsible for training staff, maintaining the correct beverage cost of sales, cash-ups, menu engineering, sales mix's, P & L's as well as various other tasks.
