Ford explains that the menu has been pared down in terms of dish numbers, but made more complex in the interplay of flavour and nuance. This is illustrated in dishes such as the main course lamb rack with smoked chilli glaze, butternut, lamb coriander ravioli, corn, tomato and Tierra coffee jus, and the Strawberry Risotto starter with basil, mascarpone, Van der Hum marinated strawberries and a parmesan crisp.
A culinary journey
The new menu, says African Pride Hotels Group marketing manager, Nicholas Barenblatt, is a culinary journey that will appeal to a wide dining audience.
"Chefs are drawing inspiration from all over the world, and while some dishes may have a home-grown start they're given a global twist with ingredients such as grapefruit chutney (that accompanies the salmon)
